2-4 tsps dried chili pepper flakes (or to taste) or 1/4 tsp cayenne pepper .
1 1/2 lbs boneless skinless chicken breasts (cut into about 3/4-inch pieces) .
2 small jalapeno peppers, seeded & sliced or 2 serrano chilies, seeded & finely sliced .
1 tsp salt .
3 c cooked basmati rice .
1 tsp minced fresh ginger .
1/2 tsp cardamom .
2 tbsps vegetable oil .
1/2 tsp pepper .
1 tbsp butter .
1 c full-fat plain yogurt .
3 tsps curry powder (or use more if desired) .
3 tbsps fresh minced garlic (to taste)
Directions
Step #1 Sprinkle top the chicken with about 1 tsp salt & 1/2 tsp black pepper (can use more pepper).
Step #2 Heat oil with butter over med-heat/flame; add in the chicken & cook for about 6-7 mins or until cooked through, remove to a bowl, cover with foil wrap to keep warm.
Step #3 Add in onions & cook for about 10 mins or until lightly browned (you might have to add in more oil if needed).
Step #4 Add in garlic, curry powder, chili flakes, ginger, cardamom & jalapeno peppers; cook stirring for 3 mins.
Step #5 Add in yogurt, cook stirring constantly for 2 mins.
Step #6 Add in chicken & raisins; cook for about 3-4 mins or until heated through.
Step #7 Add in cooked rice; stir this to mix.
Step #8 Spice up with more salt & black pepper to taste.
Step #9 Sprinkle top with sliced cashews.
