Lemon Ricotta-almond Cake ( Gluten-free ) Recipe

Ingredients
  • 1/2 tsp lemon zest .
  • 3 eggs .
  • 7/8 c sugar .
  • 1 lemon, juice of .
  • 1/2 c ricotta cheese .
  • 1/2 c almond meal or almond flour .
  • 1/3 c butter, melted .
  • 1/2 tsp lemon extract .
  • 3/4 c Pamelas ultimate baking & pancake mix

Directions
  • Step #1 Preheat the oven to 350°F.
  • Step #2 Whisk eggs & sugar.
  • Step #3 Add almond meal & butter, & stir well.
  • Step #4 Pulse ricotta in mixer or mash by hand, & then add to batter.
  • Step #5 Stir thoroughly to mix before folding in Pamela's Baking & Pancake Mix.
  • Step #6 Lastly, add the lemon zest, lemon juice & lemon extract & mix the batter to mix.
  • Step #7 Grease 8" round cake pan.
  • Step #8 Pour batter into the cake pan, & bake for 30 mins.
  • Step #9 Cool for 10 mins before slicing & serving warm.
  • Step #10 Dust with powdered sugar and/or garnish with fruit.
