1 large red onion, peeled, sliced into 1/3-inch thick rounds .
salt & pepper .
1/2 tsp brown sugar .
1/4 tsp dry mustard .
1 tbsp olive oil .
1/4 tsp ground coriander powder .
1 red pepper, seeded, finely sliced .
For the Grilled Onions .
2 tbsps extra virgin olive oil .
salt, to taste .
2 large tomatoes, seeded, finely sliced .
1 1/4 lbs top sirloin steaks, about 1 1/4-inch thick (shoulder center steak aka a Ranch Steak) .
1 English cucumber, seeded, finely sliced .
For the Salad .
1 tsp dried oregano .
fresh ground black pepper, to taste
Directions
Step #1 Spray a large nonstick skillet with cooking spray & preheat it over medium-high heat.
Step #2 In a small bowl mix all the ingredients for the rub & coat the steak well on both sides.
Step #3 Cook steak for about 7 mins, turning once,then cooking another 7 minures for medium to medium-rare if using a whole piece of steak (or just cook this until it is as rare or as cooked through as you prefer your steaks to be).
Step #4 For the Onions:.
Step #5 Brush the onion slices with oil & grill over med-heat/flame, until the onions soften & get grill marks, about 6 mins on each side.
Step #6 Spice up with salt & pepper, to taste.
Step #7 Allow steak to sit for 5 mins before slicing.
Step #8 While steak & onions are cooking, cucumber, prepare the salad: In a large bowl toss together the red pepper, & tomato.
Step #9 Add the oil, oregano, vinegar, salt & pepper to taste, & toss to mix.
