Garlicky Roasted Potatoes With Herbs Recipe

Ingredients
  • 1/4 c parsley, sliced .
  • 1/4 tsp pepper .
  • 1/2 tsp salt .
  • 1/2 tsp lemon rind .
  • 1 tbsp olive oil .
  • 1 1/2 lbs yukon gold potatoes or red potatoes, quartered .
  • 2 tbsps garlic, sliced

Directions
  • Step #1 Preheat oven to 475.
  • Step #2 Combine garlic & oil in a small saucepan over med-heat/flame.
  • Step #3 Cook 2 min or til golden, stirring frequently.
  • Step #4 Do not burn garlic! If you burn it, please start over.
  • Step #5 Remove garlic from oil by straining through a small sieve or using a slotted spoon.
  • Step #6 Drizzle garlic infused oil over potatoes & toss well to coat.
  • Step #7 Arrange potatoes in a single layer on a baking sheet coated with cooking spray & sprinkle with salt & pepper.
  • Step #8 Bake for 30-40 min, turning half way through.
  • Step #9 Combine reserved garlic, parsley & lemon in a small bowl; sprinkle it over potatoes.
