White Bean Stew Recipe

Ingredients
  • 2 tsps cilantro, fresh, sliced .
  • 1/2 c onions, sliced .
  • 1 lb boneless skinless chicken breasts, cooked & sliced .
  • 1 tsp Lawry's Spice uped Salt .
  • 2 tsps oregano leaves .
  • 1/2 tsp salt-free lemon pepper, LAWRY'S .
  • 1/2 c water .
  • 1 lb dried great northern beans .
  • 5 (14 1/2 oz) cans nonfat chicken broth .
  • 1/2 tsp Lawry's Pinch of Herbs .
  • 2 tsps ground cumin .
  • 1 (4 oz) can sliced green chilies

Directions
  • Step #1 In Dutch oven or large saucepan, onion, mix 2 quarts chicken broth, garlic, seasoned salt, beans, Pinch of herbs & Lemon Pepper.
  • Step #2 Bring to a boil; reduce heat to low.
  • Step #3 Cover up & let simmer until beans are tender, about 1 1/2 hrs.
  • Step #4 (If bean mixture becomes too thick, add extra chicken broth to thin).
  • Step #5 When beans are tender, add in the remaining ingredients; cover & let simmer 20 mins more, stirring every once in awhile.
  • Step #6 Presentation: Serve stew in individual bowls.
  • Step #7 Sprinkle top with 1 Cup shredded cheese & 1/4 Cup sliced green onions.
