Ingredients
  • 1/2 tsp red peppers .
  • green onions .
  • Eggplant layers .
  • Scenter spices .
  • 2 tbsps soy sauce .
  • 2 tsps brown sugar .
  • 1 bay leaf .
  • 1/4 tsp black pepper .
  • paprika .
  • spinach .
  • 1 large eggplant .
  • 2 boneless skinless chicken breasts, sliced .
  • Marinade .
  • 1/4 c cooking sherry .
  • 1/4 tsp red peppers .
  • 1/4 tsp black pepper

Directions
  • Step #1 Marinate chicken & marinade ingredients together.
  • Step #2 It can be marinated for an hr or overnight.
  • Step #3 Fill scenter spice bowl with scenter spices.
  • Step #4 Fill water to high water line.
  • Step #5 Place chicken & marinade mixture in rice bowl & cook for 15-20 mins.
  • Step #6 I like my eggplant a little firm but if you like yours softer cook the meat a little less time.
  • Step #7 There should be a total cooking time of 25-30 mimutes.
  • Step #8 While the chicken mixture is cooking.
  • Step #9 Slice eggplant & sprinkle with paprika.
  • Step #10 Tear the green onion pieces lengthwise.
  • Step #11 Remove rice bowl from steamer.
  • Step #12 Layer eggplant with green onion pieces.
  • Step #13 Top layers of eggplant with chicken mixture.
  • Step #14 Cook for another 10-15 mins.
  • Step #15 Serve on a bed of spinach.
