Sweet Corn Fritters Recipe

Ingredients
  • 1/4 c plain flour (45 g) .
  • 2 c kernels from corn on the cob (375 g) .
  • salt & black pepper .
  • 1/4 c cream (60 ml) .
  • 500 g potatoes, peeled & cubed .
  • 1/4 c coriander leaves, finely sliced (7g) .
  • 3 tbsps vegetable oil .
  • 1 egg white .
  • 1/3 c Thai sweet chili sauce, for dipping (90 ml) .
  • 1 egg, beaten

Directions
  • Step #1 Bring a saucepan of salted water (1 tsp salt to 1 litre water) to a boil.
  • Step #2 Add potatoes & cook for 6-8 mins until soft but not mushy.
  • Step #3 Drain well; place this in a bowl & mash with a fork or potato masher.
  • Step #4 Allow potatoes to cool slightly.
  • Step #5 Add egg & cream, & mix well.
  • Step #6 Stir in flour, corn & coriander leaves.
  • Step #7 In a bowl, using a whisk for electrical beater, beat egg white until soft peaks form.
  • Step #8 Gently fold egg white into corn mixture & season this with salt & pepper.
  • Step #9 Warm oil in a frying pan over medium fire.
  • Step #10 For each fritter, spoon 2 tbsps corn mixture into hot pan.
  • Step #11 Cook fritters until golden, 2-3 mins per side.
  • Step #12 Remove from pan & drain on paper towels.
  • Step #13 Keep warm in a preheated 110 C oven.
  • Step #14 Serve with Thai sweet chilli sauce for dipping.
