Cilantro Crusted Mahi Mahi Recipe

Ingredients
  • 1 1/2 lbs mahi mahi fillets, bones & skin removed .
  • 1/2 tsp sea salt .
  • 1/4 tsp black pepper .
  • 1/2 c fresh cilantro, sliced .
  • 2 tbsps olive oil

Directions
  • Step #1 Heat olive oil In a large-ish oven proof skillet over medium high heat.
  • Step #2 Preheat oven to 375 degrees.
  • Step #3 Spice up both sides of fish with salt & pepper.
  • Step #4 Dredge only one side of each fillet in the cilantro.
  • Step #5 Place fish, into the hot olive oil, cilantro side down, being careful not to crowd the pan.
  • Step #6 Cook until cilantro is crisp, checking often not to burn.
  • Step #7 (I check after 1 min, then every 30 seconds after that.
  • Step #8 ).
  • Step #9 Turn fish over, then place this in preheated oven.
  • Step #10 Bake for 3-5 mins, or until fish flakes easily with a fork.
  • Step #11 If you do not have a large oven proof skillet, you can cook fish a couple of fillets at a time, then transfer to a baking dish to finish cooking.
  • Step #12 You can use less oil or nonstick spray if using a nonstick pan, just remember to add more before adding more fish.
  • Step #13 Add extra cooking time since the dish is not preheated.
