Step #1 Heat olive oil In a large-ish oven proof skillet over medium high heat.
Step #2 Preheat oven to 375 degrees.
Step #3 Spice up both sides of fish with salt & pepper.
Step #4 Dredge only one side of each fillet in the cilantro.
Step #5 Place fish, into the hot olive oil, cilantro side down, being careful not to crowd the pan.
Step #6 Cook until cilantro is crisp, checking often not to burn.
Step #7 (I check after 1 min, then every 30 seconds after that.
Step #8 ).
Step #9 Turn fish over, then place this in preheated oven.
Step #10 Bake for 3-5 mins, or until fish flakes easily with a fork.
Step #11 If you do not have a large oven proof skillet, you can cook fish a couple of fillets at a time, then transfer to a baking dish to finish cooking.
Step #12 You can use less oil or nonstick spray if using a nonstick pan, just remember to add more before adding more fish.
Step #13 Add extra cooking time since the dish is not preheated.
