P.f. Chang-style Steamed Sockeye Salmon Recipe

Ingredients
  • 1/4 tsp white pepper .
  • 12 slices gingerroot, smashed (thin slices) .
  • 4 (6 oz) alaskan sockeye salmon fillets .
  • 2 tsps sugar .
  • Sauce .
  • 1/2 c chicken broth .
  • 1/2 lb shiitake mushrooms, sliced & stems removed .
  • 2 tomatoes, cut into chunks .
  • 1/4 tsp salt .
  • 4 tsps dark sesame oil .
  • 1 bunch asparagus, trimmed & cut into 2-inch pieces .
  • 1/2 c soy sauce .
  • 2 c bok choy, quartered .
  • 12 scallions, white & green parts separted .
  • 1 tbsp vegetable oil

Directions
  • Step #1 Heat oven to 450°F Have ready either parchment paper or else heavy foil wrap & also a rimmed baking sheet.
  • Step #2 Brush each piece of salmon with 1 tsp sesame oil; season this with salt & pepper.
  • Step #3 Place in parchment with ginger & green part of scallions on top.
  • Step #4 Fold parchment to make some sort of envelope or package for steaming fish.
  • Step #5 (Place on top of baking dish).
  • Step #6 Bake for about 8 mins or until salmon is barely opaque in center.
  • Step #7 Meanwhile, heat vegetable oil In a large-ish skillet until very hot but not smoking.
  • Step #8 Add mushrooms, asparagus & bok choy & stir-fry for about 2-3 min until veggies are crisp-tender.
  • Step #9 Add tomatoes & stir-fry until just hot.
  • Step #10 Transfer to serving platter or 4 serving plates.
  • Step #11 Remove pan from oven.
  • Step #12 Careful opening the.
  • Step #13 packages of the steam.
  • Step #14 Place salmon on top of vegetables.
  • Step #15 Heat sauce ingriendents; (or use All-purpose Stir-fry Sauce #87748) pour over salmon & vegetables.
  • Step #16 Optional: garnish with white part of scallions & thin strips of ginger.
