Creamy Chicken Rice Soup Recipe

Ingredients
  • salt & pepper, to taste .
  • 3/4 c flour .
  • 1 1/2 c onions, sliced .
  • 6 c skim milk, divided .
  • 56 oz chicken broth .
  • 3 c cooked chicken, sliced .
  • 1 c brown rice .
  • 1 c celery, finely sliced .
  • 1/2 c butter

Directions
  • Step #1 In a large pot over high heat, onion, mix the celery, rice, & broth; bring to a boil.
  • Step #2 Reduce heat to low, cover & let simmer 30 mins.
  • Step #3 Remove from heat & set aside.
  • Step #4 Melt butter in a medium saucepan.
  • Step #5 Slowly add the flour, stirring often, to make a roux.
  • Step #6 Add milk, 1/2 C at a time, while constantly stirring.
  • Step #7 Add roux & chicken to the rice mixture & return the rice mixture to the stove over low heat/flame.
  • Step #8 Spice up with salt & pepper to taste.
  • Step #9 Simmer for 1 hr, stirring frequently.
