Sesame Crusted Rack Of Lamb Recipe

Ingredients
  • 2 tbsps sesame seeds .
  • Crust .
  • fresh mint sprigs (to garnish) .
  • 4 racks of lamb, with 3 cutlets each, trimmed .
  • 1/2 c mint jelly .
  • 2 tbsps sesame seeds .
  • Glaze .
  • 1/2 c fresh white breadcrumbs .
  • 1/4 c coarse grain mustard

Directions
  • Step #1 Preheat oven to 220c.
  • Step #2 Line a roasting pan with foil wrap.
  • Step #3 To make the glaze, place mint jelly in a small saucepan over a low heat until softened & warmed through.
  • Step #4 Add mustard & sesame seeds; mix well.
  • Step #5 To make the crust, place the breadcrumbs & sesame seeds in a medium bowl & mix well.
  • Step #6 Brush tops of racks with half the glaze.
  • Step #7 Dip glazed tops into crust mixture, rolling to coat well.
  • Step #8 Press the crumbs on firmly with your finger tips.
  • Step #9 Place on a rack in the prepared roasting pan, crumbed tops up.
  • Step #10 Bake for 20 mins for rare lamb, 25 mins for medium & 30 mins for well done.
  • Step #11 Brush with the remaining glaze halfway through cooking time.
  • Step #12 Remove from oven & allow to stand for 5 mins before serving garnished with the mint sprigs.
