Vegetable Vindaloo
Ingredients
2 garlic cloves, sliced .
1 tsp fenugreek seeds .
2 tsps ground coriander .
5 dried red chilies .
1 tsp peppercorns .
1/2 tsp salt .
1 tbsp cumin seeds .
1 inch fresh ginger, sliced .
2 lbs stewing beef, in 11/2 " cubes .
1 tsp demerara sugar .
5 tbsps white wine vinegar .
1 medium onion, sliced .
6 green cardamom pods (seeds only) .
1/2 tsp turmeric .
1/2 pint warm water .
1 tsp black mustard seeds .
2 tbsps oil
Directions
Step #1 Grind together the cumin seeds, pepper corns, chillies, fenugreek seeds, & cardamom seeds.
Step #2 Add the salt, vinegar & sugar, to make a paste.
Step #3 In a large pan heat half of the oil & fry the onions till golden, remove this from the pan & drain.
Step #4 Add the cooked onions to the spice mix & mix again to make a thick paste.
Step #5 Heat the remaining oil & fry the meat till just brown.
Step #6 Remove the meat with a slotted spoon & put aside.
Step #7 To the pan add the ginger & garlic cook 2 mins Add the ground coriander & turmeric, fry for 2 mins.
Step #8 Add the onions & spice paste & cook over low heat/flame for 5 mins.
Step #9 Add the water & meat cover the pot & cook till the meat is tender.
