Beef Vindaloo ( The Real Thing) Recipe

Ingredients
  • 2 garlic cloves, sliced .
  • 1 tsp fenugreek seeds .
  • 2 tsps ground coriander .
  • 5 dried red chilies .
  • 1 tsp peppercorns .
  • 1/2 tsp salt .
  • 1 tbsp cumin seeds .
  • 1 inch fresh ginger, sliced .
  • 2 lbs stewing beef, in 11/2 " cubes .
  • 1 tsp demerara sugar .
  • 5 tbsps white wine vinegar .
  • 1 medium onion, sliced .
  • 6 green cardamom pods (seeds only) .
  • 1/2 tsp turmeric .
  • 1/2 pint warm water .
  • 1 tsp black mustard seeds .
  • 2 tbsps oil

Directions
  • Step #1 Grind together the cumin seeds, pepper corns, chillies, fenugreek seeds, & cardamom seeds.
  • Step #2 Add the salt, vinegar & sugar, to make a paste.
  • Step #3 In a large pan heat half of the oil & fry the onions till golden, remove this from the pan & drain.
  • Step #4 Add the cooked onions to the spice mix & mix again to make a thick paste.
  • Step #5 Heat the remaining oil & fry the meat till just brown.
  • Step #6 Remove the meat with a slotted spoon & put aside.
  • Step #7 To the pan add the ginger & garlic cook 2 mins Add the ground coriander & turmeric, fry for 2 mins.
  • Step #8 Add the onions & spice paste & cook over low heat/flame for 5 mins.
  • Step #9 Add the water & meat cover the pot & cook till the meat is tender.
