Carrot Cake With Cream Cheese Icing Recipe

Ingredients
  • 1 tsp baking soda .
  • 8 oz cream cheese, softened .
  • Wet ingredients .
  • 2 c flour .
  • 1 c oil .
  • 1 tsp salt .
  • Dry ingredients .
  • 1 tsp vanilla extract (pure) .
  • 4 c icing sugar .
  • 2 c sugar .
  • 1 tsp baking powder .
  • 3 c shredded carrots .
  • Cream Cheese Icing .
  • 4 eggs .
  • 1 tsp cinnamon .
  • 1/2 c butter, softened

Directions
  • Step #1 Preheat oven to 325°F.
  • Step #2 Mix all Dry ingredients in large bowl.
  • Step #3 in a medium bowl whisk the oil & the eggs & add the carrots & add to the dry ingredients.
  • Step #4 Mix until mixd.
  • Step #5 Spray a 13x9 pan with cooking spray.
  • Step #6 put mixture into pan.
  • Step #7 Bake 50 to 60 mins until toothpick inserted into middle comes out dry.
  • Step #8 Cream Cheese icing:.
  • Step #9 Sift powdered sugar into large bowl with fine-meshed sieve or sifter.
  • Step #10 Beat cream cheese, margarine & vanilla in another large bowl with electric mixer at medium speed until smooth, scraping down side of bowl every once in awhile.
  • Step #11 Gradually add powdered sugar.
  • Step #12 Beat with electric mixer at lowish speed until well mixed, scraping down side of bowl every once in awhile.
