Banana Pecan Butterscotch Pie Recipe

Ingredients
  • 1 3/4 c half-and-half .
  • 2 tbsps butter, melted .
  • 1 (9 inch) graham cracker crust .
  • 1 1/2 c pecan halves, toasted .
  • 1 (3 1/2 oz) package instant butterscotch pudding mix .
  • 1/4 tsp vanilla extract .
  • 2 tbsps light brown sugar .
  • 1 tsp vanilla extract .
  • 1 large firm banana, sliced very thin

Directions
  • Step #1 Reserving 1/2 c of pecan halves, finely chop the remaining nuts & mix with butter, brown sugar & 1/4 tsp vanilla.
  • Step #2 Pat nut mixture evenly over the bottom of the piecrust.
  • Step #3 Layer the banana slices over the nut mixture.
  • Step #4 With a whisk or electric mixer, mix the pudding mix powder, half & half & 1 tsp vanilla until smooth & creamy; pour over banana layer in pie.
  • Step #5 Chill at least 1 hr.
  • Step #6 Before serving, decorate the top of the pie with the reserved pecan halves--make a pretty pattern or just place this in a circle around the edge.
  • Step #7 If desired, top this with pie with one or more dollops of Reddi-Whip.
