Thai Crispy Pork Recipe

Ingredients
  • sunflower oil, for deep-frying .
  • 4 tbsps salt .
  • 2 1/4 lbs pork belly (side) .
  • 1/2 c thai coconut vinegar

Directions
  • Step #1 Score the skin on the belly of pork crossways with a sharp knife.
  • Step #2 Brush the skin with the vinegar & leave to dry.
  • Step #3 Repeat three times, then rub the pork skin with the salt.
  • Step #4 Cut the pork crossways into thin strips.
  • Step #5 Spread out the pork on a baking tray & cook in a preheated oven at 120°C/250°F/Gaslh for about 3 hrs until completely dry.
  • Step #6 Heat the oil in a wok, add the pork strips in batches & deep-fry for about 5 mins, or until the skin has crackled & is golden.
