Grilled Mahi-mahi With Pineapple Rum Glaze Recipe

Ingredients
  • 4 green onions, sliced .
  • 4 (8 oz) mahi mahi fillets, boneless & skinless .
  • 1/2 c pineapple juice .
  • 3 tbsps olive oil .
  • 2 tbsps butter .
  • 1/2 c grilled pineapples, sliced small .
  • 3 oz dark rum .
  • 2 shallots, sliced .
  • 1/4 c honey .
  • lemons or lime pepper, to taste .
  • 2 garlic cloves, minced .
  • 1 small red onion, sliced

Directions
  • Step #1 In a saucepot over med-heat/flame, add the butter, red onion, shallots & garlic.
  • Step #2 Cook for 3 mins until the onions are soft, but not brown.
  • Step #3 Add the grilled pineapple, honey, dark rum, pineapple juice & green onions.
  • Step #4 Bring to a boil, remove this from heat & set aside.
  • Step #5 Spice up to taste with salt & pepper.
  • Step #6 Preheat grill to medium high.
  • Step #7 Place the Mahi-mahi on a flat surface & rub with seasoning, pressing the spice carefully into the meat.
  • Step #8 Brush lightly with olive oil.
  • Step #9 Grill for three to four mins per side, glazing liberally with pineapple glazing syrup until the fish is just cooked through, tender & flakes lightly.
