Breast Of Chicken Oaxaca - Fried Chicken In Chipotle Sauce Recipe

Ingredients
  • 3/4 c shredded asadero cheese or monterey jack cheese .
  • 1 lb linguine (8 c hot cooked linguine) .
  • 2 tbsps flour .
  • 4 canned chipotle chiles in adobo .
  • 1/4 c hot water .
  • 3 large egg whites, lightly beaten .
  • 1/2 tsp chicken bouillon granules .
  • 1 c seasoned bread crumbs .
  • 1/4 c sliced ripe olives .
  • Chipotle Sauce .
  • 1 tbsp lime juice .
  • 1/8 tsp pepper .
  • 1/2 c low-fat sour cream .
  • 1/4 tsp salt .
  • 1 avocado, peeled, pitted & cut into 6 wedges .
  • 2 tbsps sliced fresh parsley .
  • Chicken .
  • 1 tbsp lime juice .
  • 1 tbsp vegetable oil .
  • 6 (4 oz) boneless skinless chicken breasts

Directions
  • Step #1 T prepare the sauce: Combine first 3 ingredients in a mixer; process until smooth.
  • Step #2 Pour into a bowl; stir in the sour cream & 1 tbsp lime juice.
  • Step #3 To prepare the chicken: Toss avocado with 1 tbsp lime juice.
  • Step #4 Cut a horizontal slit through thickest portion of each chicken breast to form a pocket.
  • Step #5 Stuff avocado slice & 2 tbsps of cheese into each pocket.
  • Step #6 Sprinkle top chicken with salt & pepper, dredge in flour then dip in egg whites & dredge in breadcrumbs.
  • Step #7 Heat oil In a large-ish non-stick skillet over medium-high heat.
  • Step #8 Add chicken; saute 6 mins on each side or until juices run clear.
  • Step #9 Cook pasta per package directions, drain & toss with olives & parsley.
  • Step #10 (or toss with sliced fresh tomatoes, basil & oregano, onions, garlic, as they do at the restaurant.
  • Step #11 ).
  • Step #12 Place 1 1/3 c pasta on each of 6 plates.
  • Step #13 Arrange chicken on pasta.
  • Step #14 Top with 3 tbsps of chipotle sauce.
