Chicken Breast With Tomato Olive Sauce Recipe

Ingredients
  • 3 garlic cloves, minced .
  • 12 ripe olives, pitted & sliced .
  • 1/2 tsp black pepper .
  • 3/4 tsp dried thyme .
  • 3/4 tsp dried basil .
  • 2 tbsps butter .
  • 3 tbsps butter .
  • salt & pepper, to taste .
  • 6 boneless skinless chicken breasts .
  • 1/4 tsp garlic powder .
  • 6 green olives, pitted & sliced .
  • 1 1/4 c canned Italian plum tomatoes, drained & sliced .
  • 2 tbsps olive oil .
  • 1/3 c onions, sliced

Directions
  • Step #1 Mix basil, garlic powder, thyme & pepper & rub into both sides of chicken.
  • Step #2 Cover up & let this stand for 30 mins.
  • Step #3 Melt 2 Tbs.
  • Step #4 butter & olive oil in a heavy skillet over high heat.
  • Step #5 Add chicken & saute until golden brown, about 5 mins per side.
  • Step #6 Transfer to plate.
  • Step #7 Melt 3 Tbs.
  • Step #8 butter in heavy skillet over medium-high heat.
  • Step #9 Add onion & saute until softened.
  • Step #10 Add garlic & tomatoes & cook 2 mins.
  • Step #11 Add olives & cook 5 mins more, stirring frequently.
  • Step #12 Spice up with salt & pepper to taste & serve over chicken breasts.
