Bumble Berry Baby Bundt Cakes Recipe

Ingredients
  • 1/2 tsp salt .
  • 1/4 c frozen blueberries .
  • 1/4 c frozen raspberries .
  • 1 tbsp vanilla extract .
  • 1 1/2 tsps baking powder .
  • 1 tbsp lemon zest, grated .
  • 1/2 c unsalted margarine, at about room temp .
  • 2 tbsps lemon juice .
  • 1/2 c plain soy milk .
  • 1/2 c sugar .
  • 1 egg, at about room temp .
  • 1/4 c frozen strawberries (cut into small pieces) .
  • 1 c all-purpose flour .
  • 1/2 c cake flour

Directions
  • Step #1 Preheat the oven to 350 degrees F.
  • Step #2 Butter & flour a mini bundt pan.
  • Step #3 Combine the milk & the juice.
  • Step #4 Set aside.
  • Step #5 Sift together the flours, baking powder & salt.
  • Step #6 Set aside.
  • Step #7 In a medium bowl, cream together the butter & the sugar (2 to 3 mins).
  • Step #8 Add the zest & vanilla extract & mix for another min on medium speed.
  • Step #9 Add the egg & mix well on medium speed.
  • Step #10 Alternating the flour mixture & the milk/lemon mixture, add them to the batter beginning & ending with the flour mixture.
  • Step #11 Don't over mix the batter.
  • Step #12 Remove the bowl from the mixer.
  • Step #13 Combine your berries in a bowl & sprinkle on a few tbsps of flour.
  • Step #14 Mix the berries with the flour.
  • Step #15 This will prevent the berries from sinking to the bottom of your cake.
  • Step #16 Gently fold the berries into the batter & then spoon the batter into the pan, filling each c 3/4 full.
  • Step #17 Bake the cake for 48 mins, rotating once halfway through.
  • Step #18 Test with a toothpick & cook longer if toothpick does not come out clean.
  • Step #19 Remove the pan from the oven & invert over cooling rack.
  • Step #20 Leave cakes in pan until pan is cool enough to touch (about 30 mins).
  • Step #21 Gently press on back side of each cake c to release cakes.
  • Step #22 Glaze as desired.
