Pickle Stuffed Meatloaf Recipe

Ingredients
  • 1 tomato, sliced (optional) .
  • 4 slices mozzarella cheese .
  • 2 lbs lean ground beef .
  • 1/2 tsp salt .
  • 1/2 tsp pepper .
  • 1/2 c onions, minced .
  • 1/2 c dry breadcrumbs, flavored .
  • 1 tsp dried basil .
  • 1 tsp dried oregano .
  • 1/3 c milk .
  • 6 dill pickles, sliced-lengthwise-for-sandwiches .
  • 1/2 c mushrooms, sliced (optional) .
  • 2 eggs

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 In large bowl, beat together eggs, milk, breadcrumbs, basil, oregano, onions, salt & pepper.
  • Step #3 Add ground beef & mix.
  • Step #4 Place half of ground beef mixture into bottom of roasting pan & mold into a loaf approximately 3 inches wide & 7 inches long.
  • Step #5 Fold 2 slices cheese in half & lay lengthwise down center of loaf.
  • Step #6 Top with 3 pickles, mushrooms, tomato slices & remaining pickles.
  • Step #7 Fold remaining slices of cheese in half & place on top of pickles.
  • Step #8 Mold remaining meat mixture on top, making sure all stuffing is covered on all sides, as well as top.
  • Step #9 Cover up & bake for 20 mins.
  • Step #10 Uncover & bake 40 to 50 more mins, or until meat is no longer pink on the inside.
