Cornish Game Hens Sherry Flambe Recipe

Ingredients
  • 2 rock cornish game hens, defrosted if frozen .
  • 1/4 c brandy .
  • 4 tbsps butter .
  • 1/4 c sherry wine .
  • salt & pepper

Directions
  • Step #1 Remove giblets from defrosted birds.
  • Step #2 Melt the butter in a heavy skillet with heat-proof handle.
  • Step #3 Spice up hens with salt & pepper, then brown lightly all over in the butter, turning frequently.
  • Step #4 This should take about 20 mins.
  • Step #5 When hens are browned, add sherry to the pan & transfer it to the oven.
  • Step #6 Roast birds 45-60 mins, until they are tender, basting often.
  • Step #7 Transfer hens to heated (and heatproof) serving dish.
  • Step #8 Warm brandy in a small saucepan & ignite it.
  • Step #9 Pour over the hens & serve flaming.
