Classic Eggnog Recipe

Ingredients
  • 1/2 c brandy .
  • 1 1/2 c sugar .
  • 2 tsps vanilla .
  • 12 large eggs, lightly beaten .
  • 4 c half-and-half .
  • 1/2 tsp ground nutmeg .
  • 4 c milk .
  • 1/4 tsp salt .
  • 1/2 c bourbon .
  • 2 c whipping cream

Directions
  • Step #1 Gradually add sugar to eggs In a large-ish glass mixing bowl, whisking until mixed.
  • Step #2 Set aside.
  • Step #3 Stir together half & half, milk, & salt in a Dutch oven over medium-low heat.
  • Step #4 Cook, stirring every once in awhile, 12-15 mins or just until mixture begins to bubble around edges of pan (do not boil).
  • Step #5 Gradually stir half of hot milk mixture into egg mixture.
  • Step #6 Stir egg mixture into remaining hot milk mixture in Dutch oven.
  • Step #7 Cook mixture over medium-low heat, stirring constantly, until mixture slightly thickens & thermometer registers 160 degrees (about 30 mins).
  • Step #8 Remove from heat & stir one min.
  • Step #9 Pour mixture through a fine wire-mesh strainer into a serving bowl.
  • Step #10 Stir inn bourbon, brandy, & vanilla; let cool 1 hr.
  • Step #11 Cover up & chill at least 4 hrs.
  • Step #12 Beat whipping cream at high speed with an electric mixer unti soft peaks form.
  • Step #13 Fold whipped cream into chilled eggnog, & sprinkle with nutmeg.
