Banana Coffee Cake W/ Macadamia-coconut Streusel Recipe

Ingredients
  • 1/2 tsp baking powder .
  • 1 large egg .
  • 1 tsp vanilla extract .
  • 1 1/3 c all-purpose flour .
  • 1/4 tsp baking soda .
  • 2 tbsps macadamia nuts, sliced & toasted .
  • 1/2 tsp salt .
  • 3 tbsps vegetable oil .
  • 1/4 c dark brown sugar, packed .
  • 1/4 tsp ground nutmeg .
  • 3/4 c granulated sugar .
  • 1 tbsp water .
  • 1 c bananas, mased (about 2 large ripe bananas) .
  • 2 tsps butter .
  • 2 tbsps sweetened flaked coconut

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Coat a 9-inch round cake pan with cooking spray; line bottom of pan with wax paper.
  • Step #3 Coat wax paper with cooking spray.
  • Step #4 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #5 Combine flour, baking powder, & baking soda in a bowl, salt, stirring with a whisk.
  • Step #6 Combine banana & next 5 ingredients (banana through egg) in a bowl; beat with a mixer at medium speed for 1 min or until well mixed.
  • Step #7 Add flour mixture to banana mixture, & beat until mixed.
  • Step #8 Pour batter into prepared pan.
  • Step #9 Bake at 350° for 30 mins or until a wooden pick inserted in center comes out clean.
  • Step #10 Cool in pan 10 mins on a wire rack; remove this from pan.
  • Step #11 Carefully peel off wax paper.
  • Step #12 Combine brown sugar, water, & butter in a small saucepan; bring to a boil.
  • Step #13 Cook 1 min, stirring constantly.
  • Step #14 Remove from heat; stir in the nuts & coconut.
  • Step #15 Spread over cake.
  • Step #16 Serve cake warm.
