Cinnamon Pancakey Bread Recipe

Ingredients
  • 1/3 c brown sugar or 1/4 c Splenda brown sugar mix .
  • 1 pinch salt .
  • 1-2 tsp cinnamon .
  • 1 1/4 c Splenda sugar substitute .
  • 1 1/4 c nonfat milk .
  • 3 tsps baking powder .
  • 2 c flour .
  • 1/4 c egg substitute (for a more cakey texture-optional)

Directions
  • Step #1 Set oven to 350°.
  • Step #2 Grease 11 x 7-inch baking dish, or two 8-inch round cake pans (athough the batter will seem like it will fit into one 8-inch pan, this flop rises very high & will run over the sides if baked in just one pan, you could even bake it in a 13 x 9-inch).
  • Step #3 In a bowl, mix all ingredients, except the brown sugar & cinnamon.
  • Step #4 Pour into prepared baking pan(s).
  • Step #5 Spread brown sugar & cinnamon on top.
  • Step #6 Bake for 20-25 mins.
