Ingredients
fresh ground black pepper .
1/2 tsp poultry seasoning .
4 tbsps all-purpose flour .
grated parmigiano-reggiano cheese .
2 tbsps sugar .
1/2 tsp coarse salt .
3 tbsps extra-virgin olive oil .
Sweet Gnocchi .
2 tbsps butter .
2 tbsps butter .
1 lb potato gnocchi, cooked following package directions .
1/2 tsp ground cinnamon .
2 lemons, juice of .
1 c chicken broth .
6-8 sprigs fresh thyme, leaves stripped from stem & sliced .
1 1/2 lbs boneless skinless chicken breasts .
1 medium onion, sliced
Directions
Step #1 *While you are preparing the chicken, put water on the stove to boil for the gnocchi.
Step #2 Add flour, pepper, salt, & poultry seasoning in a heavy-duty plastic zip-lock bag; shake to evenly distribute ingredients.
Step #3 Pat chicken dry & add to bag; give a good shake to lightly coat the breasts.
Step #4 Remove chicken from the bag & set aside, saving the extra flour.
Step #5 Heat olive oil over med-high heat In a large-ish nonstick skillet; add chicken & cook 5 mins on the first side; flip, & cook another 5 mins.
Step #6 Transfer chicken to a plate; add a pat of butter & onion to the skillet; cook 2-3 mins, stirring frequently.
Step #7 Add reserved flour & cook 1 min more to incorporate flour.
Step #8 Add broth & bring sauce to a broil; decrease heat to med-low & squeeze lemon juice into sauce.
Step #9 Add in thyme & extra pat of butter; add chicken back to pan & let simmer until chicken is done.
Step #10 Toss hot gnocchi with a little butter; mix sugar & cinnamon together; sprinkle cinnamon-sugar over gnocchi & toss.
Step #11 Top with a generous sprinkling of Parmigiano cheese & serve alongside chicken breasts.
