Monterey Jack Cheese Shortbreads Recipe

Ingredients
  • 2 1/2 c flour .
  • 1 tsp salt .
  • 1 c butter, at about room temp .
  • 1/2 tsp ground red pepper .
  • 8 oz monterey jack cheese, cubed .
  • 1 c sliced walnuts

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Combine cheese & butter in bowl of food procesor.
  • Step #3 Pulse & scrape down sides of bowl until mixture is smooth.
  • Step #4 Add Add flour, salt & red pepper & pulse until mixd.
  • Step #5 Add walnuts & pulse just until mixed inches.
  • Step #6 Remove dough from bowl & form into two logs, 1 1/2" in diameter & 20" long.
  • Step #7 Wrap logs in plastic wrap & chill overnight.
  • Step #8 Slice each chilled log into 1/4" thick slices.
  • Step #9 Bake on cookie sheet 12-15 mins or until lightly browned.
  • Step #10 Serve at about room temp.
  • Step #11 Store in airtight container.
