Buffalo Chicken Sandwiches (rachael Ray Style) Recipe

Ingredients
  • 4 boneless skinless chicken breasts .
  • 1 tsp olive oil .
  • salt .
  • 1/3 tsp chili powder .
  • 1 tbsp butter .
  • 8 oz reduced-fat cream cheese .
  • 4 sandwich buns .
  • 1/2 c cayenne pepper sauce .
  • 1/3 tsp paprika .
  • 1/3 tsp cumin .
  • 2 scallions, thinly sliced .
  • 4 oz blue cheese, crumbles .
  • pepper

Directions
  • Step #1 preheat indoor grill to it's recommended setting for chicken breasts.
  • Step #2 Sprinkle top chicken breasts with salt, pepper, chili powder, cumin, & paprika on both sides.
  • Step #3 drizle with olive oil & rub to evenly distribute.
  • Step #4 Place on preheated grill, & cook for 3-5 mins, or until juices run clear (depending on thickness of chicken breasts).
  • Step #5 While chicken is cooking, combing bleu cheese, sour cream, & sliced scallions.
  • Step #6 Set aside.
  • Step #7 In a small sauce pan, mix pepper sauce & butter over low heat/flame, & allow butter to melt.
  • Step #8 Preheat griddle or non stick skillet over med-med high heat.
  • Step #9 Slice sandwich rolls, & place them cut side down on the skillet.
  • Step #10 Allow to toast until lightly browned.
  • Step #11 Remove from skillet.
  • Step #12 To assemble, spread the bun bottoms with the bluecheese mixture.
  • Step #13 Take a chicken breast & coat it in the hot pepper sauce, then place on the bottom bun.
  • Step #14 Add top bun.
