Cyprus - Souvlakia - Pork Kebab Recipe

Ingredients
  • salt .
  • 4 ripe tomatoes, finely sliced .
  • lemon juice .
  • 1 onion, finely sliced .
  • pita bread .
  • 1 kg pork leg, cut into 1-inch/2 . 5cm cubes .
  • 5 tbsps fresh parsley, finely sliced

Directions
  • Step #1 Thread the meat cubes on to the skewers.
  • Step #2 Make sure the barbecue has reached the right heat.
  • Step #3 Ideally for the best results kebab should be cooked over charcoal.
  • Step #4 Place the skewers on the barbeque & liberally apply salt, turn the skewers over & salt the other side.
  • Step #5 Turn the skewers from time to time to ensure that the meat cooks evenly on all sides.
  • Step #6 Just before the souvlakia are cooked, warm some Pitta bread over the grill.
  • Step #7 Remove the souvlakia from the grill & using a fork take the meat off the skewers & put it into a serving dish.
  • Step #8 Divide a pitta in two & in the pocket spoon in the meat, tomatoes, onion, parsley, salt & lemon juice.
