Insanely Easy Vegetarian Chili Recipe

Ingredients
  • 1 1/2 c fresh mushrooms, sliced .
  • 3 garlic cloves, minced .
  • 1 c onions, sliced .
  • 1 (19 oz) can kidney beans, with liquid .
  • 1 1/2 tsps dried oregano .
  • 1 tbsp ground cumin .
  • 1 tbsp chili powder .
  • 1 c green bell peppers, sliced .
  • 3/4 c carrots, sliced .
  • 1 (28 oz) can whole canned tomatoes, with liquid, sliced .
  • 1 1/2 tsps dried basil .
  • 3/4 c celery, sliced .
  • 1 tbsp vegetable oil .
  • 1 c red bell peppers, sliced .
  • 1 (11 oz) can whole kernel corn, undrained

Directions
  • Step #1 Heat oil In a large-ish saucepan over med-heat/flame.
  • Step #2 Saute onions, carrots, & garlic until tender.
  • Step #3 Stir in green pepper, celery, red pepper, & chili powder.
  • Step #4 Cook until vegetables are tender, about 6 mins.
  • Step #5 Stir in mushrooms, & cook 4 mins.
  • Step #6 Stir in tomatoes, kidney beans, & corn.
  • Step #7 Spice up with cumin, oregano, & basil.
  • Step #8 Bring to a boil, & reduce heat to medium.
  • Step #9 Cover up, & let simmer for 20 mins, stirring every once in awhile.
