Black Bean Quesadillas With Corn Salsa Recipe

Ingredients
  • 15 oz black beans .
  • 1/2 tsp bottled minced garlic .
  • 1 1/2 tsps bottled minced garlic .
  • cooking spray .
  • 2 c sliced plum tomatoes .
  • 1/2 c sliced fresh cilantro .
  • 2 tbsps fresh lime juice .
  • 1 c frozen whole kernel corn .
  • 1/2 c sliced fresh cilantro .
  • 1 tbsp olive oil .
  • 1 red bell pepper, sliced .
  • Salsa .
  • Quesadillas .
  • 3 oz preshredded Mexican mix cheese (optional) .
  • 4 (8 inch) flour tortillas

Directions
  • Step #1 Note: Black Beans can be canned or you can cook your own.
  • Step #2 They should be cooked.
  • Step #3 For Vegan omit the cheese or sub in a Vegan Cheese.
  • Step #4 Preheat the broiler.
  • Step #5 In large hot skillet over med high heat place the olive oil to get hot then add garlic; sauté 30 seconds.
  • Step #6 Then add the tomatoes, 1/2 c cilantro, & beans & cook 5 mins or until liquid evaporates.
  • Step #7 Stir every once in awhile.
  • Step #8 Place tortillas on a baking sheet coated with cooking spray.
  • Step #9 Top each tortilla with 1/2 c bean mixture & 3 tbsps cheese; fold in half.
  • Step #10 Lightly coat tops with cooking spray.
  • Step #11 Broil 3 mins or until cheese melts & tortillas begin to brown.
  • Step #12 Cut each tortilla into 3 wedges.
  • Step #13 SALSA: Combine ingredients in a saucepan.
  • Step #14 Bring to a boil over high heat, & cook for 2 mins, stirring frequently.
  • Step #15 Serve with quesadillas.
