White Bean And Barley Salad With Beetroot And Yoghurt Dressing Recipe

Ingredients
  • 2 tbsps thyme, sliced .
  • 1 (4000 g) can white beans, rinsed & drained .
  • Beetroot & Yoghurt Dressing .
  • 200 g barley, cooked .
  • 200 g salad leaves .
  • 3 beetroots, cleaned .
  • 50 g walnuts, shelled & roughly sliced .
  • 50 g sultanas .
  • 250 ml thick yoghurt .
  • 35 g ground walnuts .
  • 2 tbsps parsley, sliced .
  • 2 garlic cloves, crushed

Directions
  • Step #1 cook beetroots in boiling water for about 20 mins until soft, cool then peel.
  • Step #2 place beets in food processor/blender with the garlic & yoghurt, pulse until smooth & creamy.
  • Step #3 pour this into bowl & stir in the the gound walnuts.
  • Step #4 In a large bowl mix the beans, barley, sultanas, herbs walnuts & salad leaves & serve accompanied by the beetroot sauce.
