Oatmeal Pudding Cookies Recipe

Ingredients
  • 2 tsps vanilla .
  • 1 1/4 tsps baking soda .
  • 1/8 tsp salt .
  • 3/4 c sliced walnuts .
  • 1/2 c butter .
  • 1/2 c white sugar .
  • 2 1/2 c large flakes oats .
  • 1/2 c mini chocolate chips (optional) .
  • 1-2 tsp cinnamon .
  • 1 1/4 c flour .
  • 1/2 c crisco butter flavor shortening .
  • 1 (3 1/2 oz) package vanilla instant pudding mix .
  • 2 large eggs .
  • 1/2 c brown sugar, packed

Directions
  • Step #1 Grease a large cookie/baking sheet.
  • Step #2 In a large bowl cream together the shortening, butter with brown & white sugar until smooth & fluffy.
  • Step #3 Add in eggs & vanilla & mix until thoroughly mixd then add in pudding mix & beat until thoroughly mixd.
  • Step #4 In a small bowl mix together flour with baking soda, pinch salt & cinnamon; add to the creamed mixture & mix until mixd.
  • Step #5 Stir in oats until mixd, then stir in the nuts.
  • Step #6 Chill dough for 2 hrs or up to 24 hrs in refrigerator.
  • Step #7 Drop by heaping teaspooonfuls onto cookie sheet.
  • Step #8 Bake at 350 degrees for 8 mins or until edges are light golden brown (do not over bake).
  • Step #9 Cool on wire racks.
