Panettone French Toast Recipe

Ingredients
  • 1/2 c mascarpone cheese .
  • 1 c packed dark brown sugar .
  • 6 large eggs .
  • 3/4 c whole milk .
  • 2 tbsps whipping cream .
  • Cinnamon Syrup .
  • 2 tbsps unsalted butter .
  • 1/2 tsp ground cinnamon .
  • 1 c water .
  • 3/4 c whipping cream .
  • 1 lb loaf panettone, baking paper removed .
  • French Toast .
  • 1/4 c sugar .
  • powdered sugar, for dusting

Directions
  • Step #1 To make the syrup: Combine 1 c of water & brown sugar in a heavy medium saucepan.
  • Step #2 Bring to a boil over high heat, stirring until the sugar dissolves.
  • Step #3 Boil until the syrup reduces to 1 c, about 10 mins.
  • Step #4 Remove from the heat & whisk in the cream & cinnamon.
  • Step #5 Keep the syrup warm.
  • Step #6 (The syrup can be made 1 day ahead.
  • Step #7 Cool, then cover & put in the fridge.
  • Step #8 Rewarm before serving.

  • Step #10 Meanwhile, prepare the French toast: Preheat the oven to 200 degrees F.
  • Step #11 Trim the bottom crust of the panettone.
  • Step #12 Starting at the bottom end of the panettone, cut it crosswise into 6 (3/4-inch thick) round slices (reserve the top piece for toast!).
  • Step #13 In a large bowl, whisk the eggs until well mixed.
  • Step #14 Add the cream, milk, & sugar & whisk until well mixed.
  • Step #15 Melt 1 tbsp of butter on a large nonstick griddle over med-heat/flame.
  • Step #16 Dip 3 slices of panettone into the custard, turning to allow both sides to absorb the custard.
  • Step #17 Grill the soaked panettone slices until they are golden brown & firm to the touch, about 4 mins per side.
  • Step #18 Transfer the French toast to a baking sheet & keep them warm in the oven.
  • Step #19 Repeat with the remaining butter, panettone slices, & custard.
  • Step #20 Transfer the French toast to plates.
  • Step #21 Dollop the mascarpone atop each.
  • Step #22 Lightly dust with the powdered sugar.
  • Step #23 Drizzle the cinnamon syrup over & around the French toast & serve as soon as possible.
