Stuffed Grape Leaves (dolmades) Recipe

Ingredients
  • 1 (8 oz) jar grape leaves .
  • 2 bunches green onions, sliced .
  • 1/3 c olive oil .
  • 1 (16 oz) can tomatoes .
  • 1 lb very-lean ground lamb .
  • 3 c loosely packed mint leaves, sliced .
  • 2 lemons, juice of .
  • 1 c long-grain rice

Directions
  • Step #1 To prepare the grape leaves: Drain the jar & carefully remove the roll of leaves.
  • Step #2 Separate the leaves, rinsing them & stacking them (be careful not to tear them).
  • Step #3 Set aside.
  • Step #4 Chop the canned tomatoes finely (I process in a food processor/blender).
  • Step #5 Combine the lamb, scallions, tomatoes & their liquid, olive oil, & mint.
  • Step #6 Lay a grape leaf, vein side up with stem pointing toward you, on your work surface.
  • Step #7 Place a tbsp of filling at the base of the leaf & roll up, tucking in at the sides to make a little bundle.
  • Step #8 (You want to roll it up tight enough so that it stays together but leave a little room for the rice to expand as it cooks).
  • Step #9 Repeat until all filling and/or grape leaves are used up, placing each bundle seam side down into a cooking pot.
  • Step #10 Squeeze lemon juice over the bundles, then add water nearly to cover.
  • Step #11 Place a small plate over the bundles to weigh them down (so they won't fall apart during cooking).
  • Step #12 Cover up & bring to a boil; reduce heat & let simmer for 1 hr.
  • Step #13 Serve hot or cold.
