Apple Coffee Cake Muffins (dairy Free) Recipe

Ingredients
  • 1 tbsp margarine .
  • 1 tsp baking soda .
  • 1/2 c whole wheat flour .
  • 2 small apples, peeled & finely sliced .
  • Coffee Cake .
  • 3/4 c sugar .
  • 1/4 c packed brown sugar .
  • 1 tbsp whole wheat flour .
  • 1/4 c sliced walnuts .
  • 1/4 c sliced walnuts .
  • 1/4 tsp salt .
  • Topping .
  • 2/3 c all-purpose flour .
  • 1/2 tsp cinnamon .
  • 1 tbsp all-purpose flour .
  • 1 tsp cinnamon .
  • 2 egg whites .
  • 1/4 c unsweetened applesauce

Directions
  • Step #1 Grease 12 muffin c or line with paper c.
  • Step #2 Set aside.
  • Step #3 To make topping, stir this together brown sugar, 1 tbsp all-purpose flour, 1 tbsp whole wheat flour & 1/2 tsp cinnamon.
  • Step #4 Cut in margarine.
  • Step #5 Stir in 1/4 c walnuts.
  • Step #6 Set aside.
  • Step #7 In a medium bowl mix flours, baking soda, cinnamon, sugar & salt.
  • Step #8 In a small bowl, mix apples & egg whites.
  • Step #9 Stir in nuts & applesauce with apple-egg mixture.
  • Step #10 Add wet ingredients to dry ingredients & mix to mix.
  • Step #11 Fill muffin c 2/3s full with batter.
  • Step #12 Sprinkle top topping over each c.
  • Step #13 Bake in a 400F degree oven for 15-18 mins, or until golden.
  • Step #14 Cool in pan for 5 mins.
  • Step #15 Remove muffins from c & serve warm.
