Leek And Mushroom Pie With Kidney Bean Crust Recipe

Ingredients
  • 1/4 c breadcrumbs .
  • 1 1/2 c thinly sliced mushrooms .
  • 1 tbsp fresh dill .
  • 3 large eggs .
  • 1 tbsp unsalted butter .
  • 12 oz kidney beans .
  • 2 1/2 c whites & light green leeks, sliced .
  • 1/4 c dry white wine .
  • 1/2 c shredded cheddar cheese .
  • 1 tsp dried mustard

Directions
  • Step #1 pat the beans dry & put between 2 sheets of waxed paper, crush with rollimg pin.
  • Step #2 scrape the beans into an 8 inch pie plate & press into bottom & sides.
  • Step #3 Preheat oven to 350 degrees.
  • Step #4 In large skillet melt butter, mushrooms, add leeks, dill, mustard & saute till leeka are tender.
  • Step #5 remove this from heat & cool slightly.
  • Step #6 in mixing bowl beat egss well, breadcrumbs, add wine, cheese & leek mixture.
  • Step #7 Stir well, salt & pepper to taste.
  • Step #8 Pour into pie plate & bake 30-40 mins, till set.
