1/2 lb fresh mozzarella cheese, cut in medium dice .
1/2 small garlic clove, minced .
6 basil leaves, finely sliced .
salt & freshly ground black pepper .
2 tbsps extra virgin olive oil .
2 plum tomatoes, sliced .
1/4 c kalamata olives, pitted & halved .
1 garlic clove, halved
Directions
Step #1 Brown the bread slices in a toaster oven or under the broiler, taking care not to let the bread burn.
Step #2 Rub a cut surface on the halved garlic clove over each slice.
Step #3 Meanwhile, place a small sauté pan with the olive oil & minced garlic over high heat for about 30 seconds, or just until the garlic begins to turn golden brown.
Step #4 Place the sliced tomato in the hot oil, turn off the heat, basil, & add the olives, cook for 1 min, & sliced mozzarella.
Step #5 Stir & season this with salt & pepper.
Step #6 Top each slice with a portion of the pan mixture.
