Ingredients
  • 1/8 c Mexican mix cheese (4 cheese mexican mix, shredded) .
  • 1/8 c green bell peppers (finely sliced) .
  • 2 c Mexican mix cheese (4 cheese mexican mix, shredded) .
  • 1/4 c whipping cream .
  • 1 loaf French bread .
  • 1/8 c onions (finely sliced) .
  • 2 tbsps sun-dried tomatoes (smoked preferred & finely sliced) .
  • 8 extra large eggs .
  • 1/8 c mushrooms (finely sliced) .
  • 1/8 c bacon (crumbled)

Directions
  • Step #1 Cut bread into 20 1/4-inch slices.
  • Step #2 Arrange slices on a baking stone.
  • Step #3 Cook Bacon & crumble.
  • Step #4 Chop onion, bell pepper, mushrooms & Sun Dried Tomatoes & put in small bowl.
  • Step #5 Add 1/8 c of cheese & bacon.
  • Step #6 In another bowl, crack eggs & add whipping cream & whisk.
  • Step #7 Spray Pam on frying pan & heat on medium for 1 min.
  • Step #8 Add sliced ingredients to egg mixture & whisk again.
  • Step #9 Add to pan.
  • Step #10 Cook "making scrambled eggs".
  • Step #11 Divide egg mixture (after cooked) evenly among bread slices.
  • Step #12 Divide 2 c of cheese evenly over the 20 pieces.
  • Step #13 Bake 15-18 mins or until golden brown.
  • Step #14 Serve hot.
