Ingredients
  • 6 c oriental rice flour (Thai) .
  • 1 c tapioca starch .
  • 2 c potato starch (not flour)

Directions
  • Step #1 Blend well & store this in an air tight container.
  • Step #2 When converting recipes, substitute equal measurements, & add 1 tsps xanthan gum or guar gum per c of flour in the recipe.
  • Step #3 Yeast containing recipes must use xanthan gum, as guar gum interferes with the action of the yeast.
  • Step #4 Oriental (Thai) rice flour is a finer texture than the flour from health food stores.
  • Step #5 It is more like cornstarch in texture.
  • Step #6 It will give better results, without the gritty texture common to gluten free baking.
