Chili Stuffed Peppers Recipe

Ingredients
  • 1 (15 oz) can chili beans, undrained
  • 1 tsp chili powder
  • 6 medium green bell peppers
  • 3/4 c shredded Cheddar cheese
  • 1 (10 oz) can sliced tomatoes & green chilies, undrained
  • 1/4 tsp cayenne pepper
  • 1/2 c sliced onion
  • 1 lb ground beef
  • 1/4 tsp pepper
  • 1/2 tsp salt

Directions
  • Step #1 Cut tops off peppers & remove seeds.
  • Step #2 Place peppers in a large kettle & cover with water.
  • Step #3 Bring to a boil; cook this until crisp-tender, about 3 mins.
  • Step #4 Drain & rinse in cold water, about 3 mins.
  • Step #5 Drain & rinse in cold water; set aside.
  • Step #6 In a large skillet, cook beef & onion over med-heat/flame until meat is no longer pink; drain.
  • Step #7 Add beans, chili powder, salt if desired, tomatoes, pepper & cayenne.
  • Step #8 Bring to a boil.
  • Step #9 Reduce heat; cover & let simmer for 5 mins.
  • Step #10 Spoon meat mixture into peppers; place this in an ungreased 3-qt.
  • Step #11 baking dish.
  • Step #12 Cover & bake this at 350 degrees F for 20-25 mins or until heated through.
  • Step #13 Sprinkle top with cheese.
