Banana Berry Wheat Germ Muffins Recipe

Ingredients
  • 2 tbsps sugar-free raspberry jam (or other flavour as desired) .
  • 1 tsp baking soda .
  • 1/2 c nonfat milk .
  • 1/4 c plain fat-free yogurt (I always use Source Apple Crumble) .
  • 1 c wheat germ .
  • 1/2 c Splenda sugar substitute .
  • 1/2 tsp salt .
  • 2 egg whites .
  • 1 banana, mashed .
  • 1 1/2 c whole wheat flour .
  • 1 tsp baking powder .
  • 1 tsp oil .
  • 1/2-1 c mixed berries, fresh or mixed berries, frozen

Directions
  • Step #1 Preheat oven to 400°F Spray jumbo muffin tins with nonstick coating.
  • Step #2 Combine flour, wheat germ, baking powder, Splenda, baking soda, & salt in medium bowl.
  • Step #3 Whisk together banana, oil, milk, yogurt, & egg whites in large bowl.
  • Step #4 Add dry to wet & stir until just mixd (add more milk if needed - the batter should be thick).
  • Step #5 Gently stir in the berries.
  • Step #6 Spoon batter into muffin tins, being careful not to overfill.
  • Step #7 Top each muffin with a small amount of jam.
  • Step #8 Bake for 20-25 mins or until toothpick comes out clean.
