Tofu Patties With Sweetcorn Cream Sauce Recipe

Ingredients
  • 170 g tofu .
  • 1/2 vegetable bouillon cube .
  • 1 pinch chili powder .
  • salt & freshly ground black pepper .
  • 1 egg yolk .
  • 1 slice white bread .
  • For the tofu patties .
  • 1/2 c sweetcorn, taken off the cob .
  • For the sauce .
  • 2 tbsps tarragon, sliced .
  • 120 ml double cream .
  • 3 tbsps oil .
  • 2 spring onions, sliced

Directions
  • Step #1 To make the patties, grind the bread & tofu together in a food processor/blender until well mixed.
  • Step #2 Spoon into a bowl & add in the egg yolk, salt, pepper, spring onion & chilli powder.
  • Step #3 Mix well.
  • Step #4 Heat the oil in a sauté pan.
  • Step #5 Spoon the mixture onto the pan & fry for 1-2 mins on each side until golden brown.
  • Step #6 To make the sauce, heat the cream in a small saucepan.
  • Step #7 Add the sweetcorn & sliced tarragon.
  • Step #8 Crumble in the vegetable stock cube & stir through.
  • Step #9 Cook for 3-4 mins to thicken the sauce.
  • Step #10 Serve with the tofu patties.
