Egyptian Grilled Chicken Recipe

Ingredients
  • 2 tsps dried oregano .
  • 500 g chicken breast fillets .
  • 1 c fresh lemon juice .
  • 1 c olive oil .
  • 1/2 tsp lemon zest .
  • salt & black pepper .
  • 4 garlic cloves (crushed)

Directions
  • Step #1 Wash the chicken fillets well & dry with kitchen towel.
  • Step #2 Whisk all marinade ingredients together.
  • Step #3 Place chicken in a glass dish, pour over marinade & ensure each piece is coated in the marinade.
  • Step #4 Cover up glass dish with cling film & leave to marinate for as long as possible in refrigerator.
  • Step #5 It is best to begin preparation for this dish the day before in order to obtain the best result.
  • Step #6 Next day: Remove dish from refrigerator.
  • Step #7 Allow it to sit for 15 mins at about room temp.
  • Step #8 Pre-heat grill & place fillets on the grill pan, brushing with remainder of marinade.
  • Step #9 Cook for approximately 25 mins, brushing with marinade, turning once during cooking.
  • Step #10 Chicken should be moist & golden, but not tough & overcooked.
  • Step #11 If chicken browns too soon reduce grill heat to moderate.
