Turkey Frittata Recipe

Ingredients
  • 1 c shredded fat-free cheddar cheese .
  • 1 c scallions or green onions, sliced .
  • 1/2 c roasted red peppers .
  • 1 tsp minced roasted garlic .
  • 1 tsp salt .
  • 16 oz turkey, cooked & sliced .
  • 1/2 c Rotel tomatoes, mild .
  • 1/2 c green peppers, sliced .
  • 1 quart fat free egg substitute .
  • 1 tsp pepper .
  • 1/2 c fat free sour cream

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Drain Rotel tomatoes & the roasted red peppers.
  • Step #3 Mix all ingredients together.
  • Step #4 Pour into a 9x13 Baking dish that has been spray with a nonstick oil.
  • Step #5 Bake for 30-40 mins or until firm.
