Ingredients
2 blood oranges .
Syrup .
1/4 c sugar .
1 1/2 c strawberries .
3 oranges (see preparation below) .
1/4 c water .
2-3 cardamom pods
Directions
Step #1 To prepare the syrup: Lightly crush the cardamom pods with a mortar & pestle or the back of a knife.
Step #2 Not too small as they will be strained from the syrup.
Step #3 Place water, sugar & cardamom in a small saucepan.
Step #4 Heat on medium for 2 or 3 mins until the sugar is melted & the cardamom begins to infuse the simple syrup.
Step #5 You should not have any bubbling & the syrup should be translucent.
Step #6 Remove from heat & set aside.
Step #7 To prepare the salad: Wash & hull the stawberries.
Step #8 Halve or quarter the berries & place this in bowl.
Step #9 Take the oranges & trim the tops so they will sit nicely on your cutting board.
Step #10 Trim down the side of the orange with a knife to remove the peel & all visible pith (white part.
Step #11 You are trying to keep as much of the orange flesh on the fruit.
Step #12 Split the orange in half & trim out white in the center.
Step #13 Cut orange halves into 4 to 6 segments depending on the size of the fruit.
Step #14 Place oranges in the bowl with the strawberries.
Step #15 Pour the syrup over the fruit salad & stir.
Step #16 Chill for a minimum of 30 mins.
Step #17 If you are chilling longer, periodically mix to make sure all the fruit is in good contact with the syrup.
Step #18 Serve.
