Strawberry Jam (pectin Added) Recipe

Ingredients
  • 1 lemon, zest of, finely grated .
  • 1/4 c lemon juice .
  • 1 (1 3/4 oz) package dry pectin .
  • 2 quarts strawberries .
  • 7 c sugar

Directions
  • Step #1 Wash strawberries; drain.
  • Step #2 Remove Stems.
  • Step #3 Crush strawberries on layer at a time.
  • Step #4 (I use a potato masher for this.
  • Step #5 ).
  • Step #6 Combine strawberries, powdered pectin, lemon juice, & lemon zest In a large-ish saucepot.
  • Step #7 Bring to a boil, stirring every once in awhile.
  • Step #8 Add sugar, stirring until dissolved.
  • Step #9 Return to a rolling boil.
  • Step #10 Boil hard 1 min, stirring constantly.
  • Step #11 Remove from heat, & skim foam if necassary.
  • Step #12 Ladle into hot, sterilized jars, leaving 1/4 inch head space.
  • Step #13 Adjust 2 peice caps.
  • Step #14 Process 10 mins in a boiling water canner.
