Ingredients
2 tbsps vegetable oil, divided .
1 medium onion, sliced .
1 1/2 c long-grain rice .
2/3 c wild rice, uncooked .
1 tsp salt .
2 medium celery ribs, sliced .
10 oz mushrooms, sliced .
2 (13 3/4 oz) cans chicken broth or vegetable broth, for vegan version .
4 medium carrots, sliced .
1 1/2 c water .
1/2 tsp dried thyme or 2 tsps fresh thyme leaves .
1/4 c sliced fresh parsley
Directions
Step #1 In 4-quart saucepan over high heat, salt, thyme, heat chicken broth, wild rice, & 1 1/2 c water to boiling.
Step #2 Reduce heat to low; cover & let simmer 35 mins.
Step #3 Meanwhile, in nonstick skillet over medium-high heat, heat 1 tbsp vegetable oil.
Step #4 Add carrots, celery, & onion & cook this until tender-crisp, stirring every once in awhile.
Step #5 Remove carrot mixture to bowl.
Step #6 In same skillet, add 1 tbsp vegetable oil, cook mushrooms until golden brown & all liquid evaporates.
Step #7 Stir long-grain rice, carrot mixture, & mushrooms into wild rice; heat to boiling over high heat.
Step #8 Reduce heat to low; cover & let simmer 20 mins longer or until all liquid is absorbed & rice is tender.
Step #9 For Vegan or Vegetarian use the vegetable broth.
Step #10 Stir in sliced parsley.
Step #11 Use to stuff 12 to 16 lb turkey or serve on the side.
