Wild Rice Stuffing Recipe

Ingredients
  • 2 tbsps vegetable oil, divided .
  • 1 medium onion, sliced .
  • 1 1/2 c long-grain rice .
  • 2/3 c wild rice, uncooked .
  • 1 tsp salt .
  • 2 medium celery ribs, sliced .
  • 10 oz mushrooms, sliced .
  • 2 (13 3/4 oz) cans chicken broth or vegetable broth, for vegan version .
  • 4 medium carrots, sliced .
  • 1 1/2 c water .
  • 1/2 tsp dried thyme or 2 tsps fresh thyme leaves .
  • 1/4 c sliced fresh parsley

Directions
  • Step #1 In 4-quart saucepan over high heat, salt, thyme, heat chicken broth, wild rice, & 1 1/2 c water to boiling.
  • Step #2 Reduce heat to low; cover & let simmer 35 mins.
  • Step #3 Meanwhile, in nonstick skillet over medium-high heat, heat 1 tbsp vegetable oil.
  • Step #4 Add carrots, celery, & onion & cook this until tender-crisp, stirring every once in awhile.
  • Step #5 Remove carrot mixture to bowl.
  • Step #6 In same skillet, add 1 tbsp vegetable oil, cook mushrooms until golden brown & all liquid evaporates.
  • Step #7 Stir long-grain rice, carrot mixture, & mushrooms into wild rice; heat to boiling over high heat.
  • Step #8 Reduce heat to low; cover & let simmer 20 mins longer or until all liquid is absorbed & rice is tender.
  • Step #9 For Vegan or Vegetarian use the vegetable broth.
  • Step #10 Stir in sliced parsley.
  • Step #11 Use to stuff 12 to 16 lb turkey or serve on the side.
