Grammie Bea's Lazy Daisy Oatmeal Cake Recipe

Ingredients
  • 1/2 c butter .
  • 3/4 tsp cinnamon .
  • 1/2 tsp salt .
  • Cake .
  • 1/2 c brown sugar .
  • 1 1/2 c flour .
  • 1 1/4 c boiling water .
  • 1 c uncooked rolled oats (instant or regular) .
  • 1/3 c nuts, sliced .
  • 3 tbsps canned evaporated milk .
  • 1 1/2 tsps baking soda .
  • 1 tsp vanilla .
  • 1/4 tsp nutmeg .
  • Topping .
  • 2 eggs .
  • 1/4 c butter, melted .
  • 1 c granulated sugar .
  • 1 c brown sugar

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Cake:.
  • Step #3 In a shallow bowl, mix rolled oats & boiling water.
  • Step #4 Let stand for 20 mins.
  • Step #5 Using a mixer, cream butter until creamy.
  • Step #6 Gradually beat in sugars, & beat until light.
  • Step #7 Blend in eggs & vanilla.
  • Step #8 Mix flour, salt, baking soda, & spices.
  • Step #9 Remove beaters from creamed mixture.
  • Step #10 Stir in rolled oat mixture.
  • Step #11 Fold in flour mixture.
  • Step #12 Blend well.
  • Step #13 Pour batter into a greased & floured 9" square cake pan.
  • Step #14 Bake for 45-55 mins Remove from oven, but DO NOT REMOVE CAKE FROM PAN.
  • Step #15 Topping:.
  • Step #16 Combine all melted butter.
  • Step #17 brown sugar, canned milk & nuts.
  • Step #18 Spread over the hot cake.
  • Step #19 Return the cake to the oven, under the broiler.
  • Step #20 Broil until the topping is bubbly & tinged with gold.
  • Step #21 Watch it as it will burn easily.
