Chile Chicken With Pineapple Salsa Recipe

Ingredients
  • 1/4 c red onions, sliced .
  • 1 (20 oz) can pineapple chunks in juice, drained & coarsely sliced .
  • 1/2 tsp salt .
  • 2 tsps ground ancho chili peppers .
  • 1 tbsp fresh lime juice .
  • 4 boneless skinless chicken breasts .
  • 1 tsp jalapeno peppers, finely sliced .
  • 1 tbsp olive oil .
  • 1 tbsp fresh cilantro, sliced

Directions
  • Step #1 Preheat oven to 400F degrees F.
  • Step #2 Combine ancho chile & salt.
  • Step #3 Wash hands.
  • Step #4 Rub spices on chicken, wash hands again! Heat oil in large oven-proof skillet to medium high heat.
  • Step #5 Cook chicken until browned, about 2 mins per side.
  • Step #6 Transfer chicken in skillet to oven, bake 10-15 mins or until done (internal temperature 170 degrees F).
  • Step #7 To make salsa, mix remaining ingredients in a small bowl; add a pinch of salt.
  • Step #8 Serving suggestion: serve chicken on a bed of rice & top this with salsa.
  • Step #9 Refrigerate leftovers.
