Weight Watchers 2pt Layered Mexican Bean Dip (vegetarian) Recipe

Ingredients
  • 2 medium scallions, sliced .
  • 1 (16 oz) can fat-free refried beans .
  • 1 tomato, sliced .
  • 1 c nonfat sour cream .
  • 10 medium black olives, sliced .
  • 2 tbsps sliced fresh cilantro .
  • 2 tbsps old el paso fajita seasoning mix .
  • 1/4 tsp salt .
  • 1/2 c shredded fat-free cheddar cheese .
  • 3 medium avocados (finely mashed) .
  • 1 tsp fresh lemon juice

Directions
  • Step #1 Spread beans evenly over bottom of a 13 x 9-inch glass baking dish.
  • Step #2 In a bowl mix avocado, salt & lemon juice, then spread the mixture over the beans.
  • Step #3 Top with sour cream.
  • Step #4 Sprinkle top the fajita seasoning over sour cream layer.
  • Step #5 Next, layer remaining ingredients on top in order listed.
  • Step #6 Serve as soon as possible or chill until ready to use.
